Simple Noodle Stir-Fry

Hello lovely humans 🙂 I hope you’re all having a lovely week so far.

Mine, like I’m sure many of yours, has been very very busy. Between work, home and baby, time is flying! This is why these quick, super simple recipes have become my week-night go tos.

I like saying that I make time – I make time in the sense that I used the six minutes that it takes to sterilize bottles to chop up veggies, I make time in the sense that I prep breakfast the minute Amber is down for the night before I call it a day, I make time when Ian is on bathing duty so I clear up and organize in the 10 minutes it takes to wash baby.

Being organized and efficient has never been more relevant or important to me than it is now. While this is not a dish you can prep ahead of time, if you steal five minutes and simply chop your veggies beforehand, even a day or two before, this dish takes literally 10 minutes to make.

INGREDIENTS:

2 portions rice noodles of choice

For the stir-fry

1 red bell pepper

1 yellow bell pepper

1 orange bell pepper

4 spring onions

250g mushrooms

1 block (300g) Clearspring organic silken tofu

1 tablespoon sesame oil

1-2 tablespoons tamari *

For the sauce

2 tablespoons tahini

1 tablespoon sesame oil

1 tablespoon warm water

1 tablespoon tamari

1 tablespoon hoisin sauce

*tamari is a naturally fermented condiment that is similar to soy sauce but of much higher quality and purer flavor.

Method

Step 1: clean, chop and prep veggies AND chop and marinate tofu.

To marinate tofu all you need to do is remove it from its container, chop into small cubes, remove excess water and add 1-2 tablespoons tamari. Let it marinate while you prep and cook veggies. Just a few minutes is enough but you can let it marinate for up to 2 hours.

Step 2: cook your veggies. Heat a non stick pan (medium to high heat) and add mushrooms together with a generous pinch of salt. Allow to cook and release their water before adding the tablespoon of sesame oil. This allows mushrooms to brown properly. Once browned, add the oil and the rest of your veggies together a tablespoon of tamari.

Once all the veggies are cooked to your liking, add tofu (together with excess tamari). Stir in with veggies and turn off heat.

Step 3: while veggies are being cooked, prepare your sauce. This couldn’t be simpler. Just add all the ingredients listed above to a bowl, whisk well to incorporate and done!

Step 4: cook rice noodles of choice according to package instructions.

Step 5: mix it all together. Add sauce and cooked noodles to your stir fry. Mix well.

Step 6: add your toppings. I love adding sesame seeds and green onions! It adds so much flavor and a little bit of crunch which works really well here.
