Twenty (20 minute) dinners

Hey hey beautiful people, I hope you’re all doing well!

Happy new week everyone – I’m very happy to be back on full swing (almost) with my posting again after a little break after having Baby Amber ❤️

These past few weeks have gone by in a flash and have been so eventful, beautiful and exhausting all at once.

Mum has been a HUGE help with baby and has made us many meals on those very busy days. I had also prepared many frozen meals which I am using slowly for those hectic days that go by too quickly!

When I do cook nowadays, I’ve been sticking to very quick dinners because I never know how much time I have with a newborn in tow.

Here are some of our absolute fave 20 minute dinners that are really healthy and full of flavor! Here’s a run down of some of our absolute favorites rights now that have been total lifesavers lately.

Quinoa & Bean Tabbouleh Salad

Quick and easy to make this is the perfect supper dish, loaded with flavor, fibre and veggie protein this is a total winner! Perfect for hot summer days. Click on the highlighter link above to view the recipe.

Vegan Walnut Pesto

This is my ultimate vegan pesto recipe that we absolutely love. If you make a large batch, make sure to freeze it in single portions (like in an ice cube tray of brownie tray like I did here) and freeze. This way, all you need to do is prep some pasta or rice or even veggies and mix in a cube of homemade pesto.

Greek chickpea salad

Refreshing, filling and very quick to make, this is your ‘meat free Monday’ meal sorted! Definitely a flavorful, filling salad that screams summer!

Cooking with Tofu – 5 recipes

Veggie Pasta w Feta and Sesame

This dish is barely a recipe; it’s so easy and versatile and works with almost any veggies or grain you have on hand.

Simply boil pasta (or whatever grain you’re using) according to package instructions.

While pasta boils, chop your veggies – here I used baby corn, zucchini and bell peppers – and add to a pan on medium heat with a bit of olive oil. Cook for a few minutes and remove from heat.

Crumble some feta and add a lot of sesame seeds then mix with pasta and a bit of either olive oil or sesame oil – takes even less than 20 mins, filling, satisfying and so easy!

Feta Pasta – Two Ways

I bet you’ve seen this trend – this baked feta pasta was all the rage a few months ago!

Feta + tomato pasta

Add a pint of cherry tomatoes, olive oil, a block of feta and salt and pepper to an oven safe tray and bake at 200 for 20 mins. Mash tomatoes and feta with fork, add fresh herbs and cooked pasta et voila! Dinner in a flash!

Feta + bell pepper pasta

Add a block of feta, slice red onion, sliced bell red and orange pepper, olive oil, pine nuts and salt and pepper to an oven safe dish. Bake at 200 for 20 mins. Remove from oven and mix well together with olives, fresh herbs and cooked pasta

Nutty Noodles

I’ve added this dish to “20 minute dinners” but in truth this takes just a 5-8 minutes to make!

Simple cook two portions of rice noodles according to package instructions.

In a bowl mix 3 tablespoons sesame oil, 2 tablespoons Tahini, 2 tablespoons soy sauce, 1 tablespoon hoisin sauce or honey and mix together until combined. Mix with warm noodles and top with green onions and lots of sesame seeds – SO GOOD! Try this one out because it’s amazing flavor for almost no effort at all.

Roasted Veg CousCous

Cut up veggies of choice in small chunks, add some olive oil and salt and pepper and cook at 200 degrees for 20 – 30 mins until tender.

Cook couscous according to package instructions; this wholemeal couscous is cooked but being soaked in warm water. Cook two portions and add 1/2 a veg stock cube, a teaspoon of turmeric and some salt and pepper.

Mix everything together, add some Tahini and mixed seeds and enjoy!
