Greek chickpea salad

Hey hey you lovely lot – I hope you’re all having a wonderful day!

I’ve been craving big, bold, vibrant salads lately and the traditional Greek salad has always been a favorite of mine. However, I often find it’s not filling enough to be a main meal for me. So I came up with this Greek – inspired chickpea salad which we absolutely love. It’s filling, takes 5 mins to put together and makes a really nice, well balanced meal.

The dressing pairs beautifully with it and you can customize it with different veggies if you prefer – this is my fave combo however!

Ingredients:

1 can chickpeas, rinsed and drained

2 large tomatoes, diced

1/2 cucumber, diced

3-4 tablespoons black olives

1 cup Small colored peppers, chopped

1 cup baby corn; grilled

1/2 – 1 block Feta cheese

Dressing

1 teaspoon garlic powder

1 teaspoon rice wine vinegar

1 tablespoon whole grain mustard

2 tablespoons olive oil

Juice from 1/2 a lemon

Fresh chives

Method:

Start by grilling baby corn for a few mins in a tablespoon or so of olive oil. While that’s cooking, chop all your veggies and place them in a large bowl.

Add cooked corn, olive and crumbled feta on top.

Add all dressing ingredients to a small bowl and whisk together until combined.

Pour dressing over salad, mix everything together and serve.
