Coconut Oil Choc Chunk Cookies 🍪

Hey hey beautiful, happy Fri-yey 🎉

Nothing better than fresh cookies to start the weekend off on the right foot!

I think these are my favorite cookies I’ve ever made. They’re crunch, chewy and so delicious.

They also come together in just one bowl and use very few ingredients- what’s not to love?

Ingredients

1.5 cups (wholemeal) flour

0.5 cup Good Earth coconut oil

0.5 cup Good Earth honey

0.5 cup chocolate chunks

1.5 teaspoon baking powder

Pinch of salt

Method:

Start by preheating your over to 180 Degrees Celsius. Now, line a baking tray with parchment paper.

To make the cookies, simple place all the above ingredients in a bowl and mix well. Divide into 12 balls and flatten onto parchment lined baking tray. Make sure you leave some room between the cookies and these spread out quite a bit.

Bake in the over for 12 to 14 minutes and allow to cook completely before enjoying with a cup of coffee – perfection!

These couldn’t be easier to make; you need no equipment, no fancy or hard to find ingredients and all you have to do once you’re done is clean one bowl and throw out the parchment paper. They’re the perfect weekend treat!

They also just happen to be dairy and egg free and using whole grain flour will also ensure you get a lot of fibre in there too! I promise you won’t even know these are healthy-ish 😉
