Creamy Artichoke & Kale Pasta

Hello there lovely people, I hope you’re all doing well.

What’s better than a delicious plate of pasta for lunch or dinner? One that comes together really easily, contains nourishing ingredients and tastes absolutely delicious!

Ingredients (serves 2):

2 servings cooked pasta

1 tablespoon olive oil

1 onion

2 cloves garlic

200g frozen artichoke hearts

4 stalks kale

150ml light soy cream

Salt, pepper and (vegan) grated cheese to serve

Method:

Start by cooking pasta of choice according to package instructions. Drain and set aside but reserve about a cup full of pasta water.

For the sauce, start by adding olive oil, onion and garlic to a medium sized pot over medium to high heat and cook until fragrant and slightly browned. Now, add you frozen artichokes. Cook for a few minutes and add soy cream and kale leaves. Remove the hard stem down the middle from the kale and just use leaves – cut into bite sized pieces before adding to pot. Simmer for about 10 minutes and add pasta straight to the pot. Mix well and if needed, add your pasta water to loosed mixture.
