Pepperonata

Hello there beautiful people, I hope you’re all having a lovely week so far 🙂

Today I thought I’d share a super simple recipe that I discovered recently which I’ve been making on repeat at home.

It’s a really simple dish that comes together in minutes, is made up of a few simple ingredients and is definitely worth the effort to make.

Pepperonata is a dish that is typically make with bell peppers, onions and tomatoes. I’m going to share two versions here. One simple, more traditional pepperonata – which is lovely with bread and dips – and another which is makes an awesome pasta sauce.

Pepperonata

Ingredients:

2 tablespoons extra virgin olive oil

2 large onions

4 bell peppers – I use a mix or red and orange peppers

1/2 cup sliced grape or cherry tomatoes

1 tablespoon tomato paste

salt and pepper to taste

Method:

Start by chopping all your veggies. Chop up onions into small pieces, cut peppers into small bit sized pieces and slice cherry or grape tomatoes in half.

Add olive oil to a large pan over medium to high heat. Add your onions and cook for a few minutes until translucent and tender. At this point, add tomato paste and mix well. Now add pepper and tomatoes. Cook your mixture for about 20 minutes until caramelized, browned and very fragrant.

I love this over toast with roasted garlic – best combo!

Pepperonata Pasta Sauce

Additional Ingredients:

400g Tomato puree

1 cup water

fresh basil

Method:

Follow the method above and simply add the tomato puree and water, mix well and cook for an additional 8-10 minutes. Add fresh basil, mix with your fave pasta and enjoy!
