THREE ingredient energy bites

Hey beautiful people, I hope you’re all doing well!

Today I’m coming to your inboxes (if you’re not yet following the blog, click on the ‘follow’ button at the bottom of the page and you’ll receive an email every time I post) with an incredibly easy treat!

Three ingredients and five minutes is all you need to make these delicious almond butter energy bites. They’re loaded with important nutrients, protein especially, are low in carbs, are very customisable, and have just the right amount of sweetness.

I’m not going to drone on forever, promise! Let’s just get to the recipe

Ingredients:

1 cup almond butter

1/2 cup coconut flour

1/4 cup honey (can sub for agave, maple syrup or liquid sweetener of choice)

  • optional add ons – choc chips, raisins, cranberries, almonds, pistachios

Method:

Simply mix almond butter, coconut flour and liquid sweetener until well combined then form into small balls. I make about 14-16 balls / bites out of this recipe but feel free to make them smaller or larger.

You can leave them as is – which is delicious – or you can go the extra mile and chop some nuts or dried fruit or chocolate and roll the balls in your topping of choice. My fave combo is with salted pistachios – the combination of sweet and salty is perfection!

Then place in the fridge to set for min 30 mins.
