Grain Free Choc Chunk Cookies ๐Ÿช

Hello there Ninjas ๐Ÿ™‚

I hope you’re all doing great! I’ve been messing about in the kitchen for a few hours and have come up with a couple of awesome recipes for you guys.

My personal fave is this choc chunk cookie recipe – super easy, no equipment is needed and they taste DIVINE. This recipe uses really great ingredients and contains no grains which means that they are much lower in carbs than your traditional cookies. It also uses very little added sweetener which is a big plus too.

So, here’s how to make them.

Ingredients:

1 cup peanut butter

1/4 cup honey (or any liquid sweetener or choice)

1 tablespoon milk (dairy or plant based)

1 egg

1 teaspoon vanilla

1/2 teaspoon baking powder

3 tablespoons coconut flour

1 tablespoon Maca Powder

50g dark chocolate chunks

Method:

Mix your peanut butter, honey, vanilla, milk and egg together in a large bowl using a fork or whisk until you have a cohesive mixture. Now add Maca powder, coconut flour, baking powder and chocolate chunks.

Form into twelve balls on a parchment lined baking tray and flatten into cookies. Bake for 12 to 15 minutes at 180 degrees Celsius until edges are golden brown and remove from the oven to cool.

Then enjoy ๐Ÿ˜‰
