Low Carb Coconut Cookies 🍪

How’s everyone doing today? I recently made the most delicious coconut flour cookies – and of course, I was instantly eager to share it with all of you! I made two varieties – chocolate chip or cranberry and cashew. I loved both but even though I’m a self proclaimed chocoholic, I think my fave is cranberry cashew.

I’ve been testing out a few low carb recipes due to popular demand – these use coconut flour which is naturally lower in carbohydrate content than many other flours such as wheat, oat, spelt or even almond flour.

But, don’t take my word for it, try both and let me know 🙂

Ingredients;

1/2 cup coconut flour

1/4 cup coconut oil

1/8 cup maple syrup

2 eggs

1/4 cup chocolate chips OR dried cranberries and cashews

Method:

Preheat your oven to 180 degrees Celsius.

Mix oil, eggs and syrup in a bowl and whisk until everything is well incorporated, then gradually add flour and finally add your chocolate chips or nuts and fruit.

Mix really well and wait a couple of minutes before forming into cookies; coconut flour takes some time to hydrate well. Then form into balls and press down to form cookies on a parchment lines baking tray.

This dough makes around 8 large cookies.

Bake for 15-20 minutes. Cook completely and then enjoy. So good!
