Easy Oat Muffins

Hello there beautiful people, I hope you’re all doing well!

I made these (toddler and adult approved) oat muffins last week, and again this week, that went down a treat. They’re super simple to make, are plant-based and contain no complex or hard-to-find ingredients.

Their flavour is amazing considering how simple the ingredients actually are. They’re also the perfect weekend baking project because they truly are uncomplicated and fun to make.

Here’s how to make them.

Ingredients:

150g Good Earth oat flakes OR oat flour
150g Good Earth spelt flour
50g Good Earth coconut oil
200ml Good Earth Organic honey
200ml Alpro this is not milk
1 tsp cinnamon
1 tsp bicarbonate of soda

Method:

Pre-heat over to 180 Celsius.

If you’re using oats, start by blending your oats in a food processor. If you’re using oat flour, you can skip this step.

Mix your dry ingredients – oat flour, spelt flour, cinnamon and bicarbonate of soda – in a large bowl. In another bowl, mix melted coconut oil, milk and honey.

Make a well in the middle of your dry ingredients and slowly add your wet ingredients. Mix well and add to your muffin tray. Top with some oat flakes and make at 180 Celsius.

This recipe makes 12 small muffins, or 6 xl muffins. My muffin tray is very large and deep so this recipe yields 6 really big (and beautiful) muffins for me.

Bake for 20-25 minutes (if making 12 muffins) until risen and beautifully golden.
