Oat & Nut Bars

Hey friends, I hope you’re all doing well.

I whipped up some really delicious no-bake oat and nut bars this week which we all loved. They’re simple and easy to make, ingredients can be swapped according to your preferences or dietary restrictions.

My all time favourite thing to make is healthy snacks (often sweet) and healthy desserts. So, when I tell you this is one of my best, know that the bar is quite high.

Here’s what you’ll need to make them

Ingredients:

1.5 cups jumbo oats

1/2 cup Whole Earth (drizzle) peanut butter

1/4 cup Good Earth Organic Honey

1/4 Good Earth pecans

2 tablespoons Good Earth chia seeds

Method:

In a small pan, combine peanut butter and honey. Warm over low heat on the stove and mix well just until the mixture is combined and slightly warm to the touch. Do not overheat; the organic honey is immensely nutritious and high heat will diminish some of it’s health benefits. This step is simply there to combine the two ingredients.

In a large bowl, add all the other ingredients – jumbo oats, chia seeds and pecans. To this, add you peanut butter and honey mixture. Mix very well until all the oats, nuts and seeds are coated.

Transfer into a small parchment lined baking dish and flatten to desired texture. Don’t worry if your dish is too large; simply flatten into a small rectangle and leave the rest empty. This mixture is very thick so it won’t run.

Place in the fridge for at least an hour to harden then cut into slices and enjoy!

NOTE: You can use any nuts or seeds you like instead of pecans and chia seeds – they simply happen to be my favourites because of both taste and health benefits. You can use rolled oats instead of jumbo oats here if you only have rolled oats. The texture will be a bit different but still delicious. Finally, you can use any nut or seed butter you like here and any liquid sweetener of choice but I do think the combination of peanut butter and a good quality honey work best.
