Hello lovely people, I hope you’ve had a great week!
October is Vegetarian month and to commemorate the occasion, I thought I would share a roundup of some of my favourite veggie meals and snacks.
NOTE: you don’t have to be vegetarian or following and particular diet to enjoy vegetarian meals. I am not here trying to force veggie meals down anyone’s throat. HOWEVER, if you are interested in trying something new and delicious, that is also better for your health and that of the planet, please read on!
My diet is flexitarian (meaning I have a bit of everything on occasion) however it is largely plant based and made up of mainly whole foods. Therefore, cooking and eating at home, which we do almost daily, is always either vegetarian or vegan which is why I have A LOT of recipes to share with you here.
For this reason, I am going to share recipes in sections to make it easier to scroll through and choose from. I am going to link my top five blog posts (many of which contain multiple recipes) in each section. BREAKFAST
MEAL PREP – Breakfast 5 Ways – from overnight oats to granola and egg cups, this post has everything you need to try something new and healthy for breakfast.



Five Healthy Breakfast Recipes – sweet edition! – Pancakes, parfait and chia jam; all bursting with sweet flavors and so much goodness.



Easy Breakfast Oats – a classic; this is ALWAYS my go-to when I want something warm and comforting first thing in the morning. It never ever disappoints.

A Healthy Breakfast Crumble so yummy you’ll eat it for Desert too… – this is so good. It takes a bit of work but if you do put in the effort, you’ll have a breakfast so delicious, it will be like you’re having dessert first thing in the morning.

Super Healthy Smoothies – another classic that can work just as well as a snack as it does for breakfast, check out some of my faves here.



SNACKS
Protein Packed Snacks -quick, easy and delicious snacks with a variety to choose from. Check this out.





Cashew Protein Truffles – these truffles were a staple at home for a very long time. They take minutes to put together and are well worth the effort to make.

Delicious Dips – Five Faves – I’ve always been a big fan of dips and often have a dinner of ‘nibbles’, check out some of our faves here.


MEAL PREP – Snacks; Savory edition – more dip recipes and yumminess here!



Chocolate Pudding (vegan) – THIS is one of the EASIEST, but most DELICOUS things I make. Try it. It’s SO good.

MAIN MEALS
Goat Cheese Penne 🍝 – a recent post and one of my current go-to’s on very busy days. Really easy and so tasty.

Stuffed Sweet Potatoes – 3 ways – these stuffed sweet potatoes make a really nice filling meal with a difference.

Pasta Salad with Roasted Veg – Roasted veg + pasta = match made in heaven

Peach & Bufola rice salad – THIS IS ONE OF THE BEST THINGS I MADE ALL SUMMER. YOU HAVE TO TRY THIS ONE OUT. Caps for emphasis; promise I’m not yelling!
