Spicy Soba Noodles

Hey lovely people, I hope you’re all doing well.

It’s Fri-yey which means it’s new blog post day 🎉

I’m sharing my new fave protein packed 10 minute recipe. It’s easy to make, goes down a treat and makes a delicious weeknight meal.

Here’s what you’ll need to make it.

Ingredients:

2 tablespoons sesame oil

2 cloves garlic

2 teaspoons chili flakes

250g mushrooms

300g Clearspring Silken tofu

3 tablespoons Clearspring tamari soy sauce

2 tablespoons Sunita tahini

200g Clearspring soba noodles

Sesame seeds

Green onions

Method:

Start by boiling water to cook noodles.

In the meantime, heat sesame oil and add sliced garlic and chili flakes for a couple of minutes until fragrant. Thinly slice mushrooms and add them to the pan.

Fry mushrooms and add tamari. Cook together for about 8-10 minutes.

While the mushrooms cook, place tofu in a bowl, add tahini and mix well.

Now add it all together. Add the tofu mix to the mushrooms together with the cooked noodles and stir well.

Finally, plate your noodles and add thinly sliced green onions together with a generous helping of sesame seeds and enjoy.
