Goat Cheese Penne 🍝

Hello there lovely people, I hope you’re all doing really well!

It’s FRI-YEY! If you, like me, had an exhausting week and just want a quick delicious dinner for tonight, look no further.

This pasta dish comes together in the time it takes to boil your penne. It contains very few ingredients and is absolutely delicious 🤤

Ingredients:

500g Good Earth whole grain penne

1 block Hotos goat cheese

2 cloves garlic

4 stems kale (stems removed)

1 cup cherry tomatoes (halved)

3 tablespoons sun dried tomatoes

Olive oil

Lemon

Method:

Start by cooking your pasta according to package instructions.

While it cooks, grab a large pan, add olive oil, garlic and cherry tomatoes and cook over low heat for a few minutes until very fragrant and tomatoes are soft. Next add in kale (cut into small pieces) and soften. Now add crumbles goat cheese, sun dried tomatoes (chopped) together with a ladle or two full of pasta water.

Once pasta is fully cooked, reserve some of the cooking liquid and drain.

Add pasta to sauce and mix well and add the juice of 1/4-1/2 of a lemon.

If it’s a bit dry, simple add some more pasta, water and serve.

NOTE: you could also opt to add some chili flakes to this; I decided not to this time because I have a toddler who eats all our food!
