Peach & Bufola rice salad

Hey hey beautiful people, I hope you’re all having a good day.

I have a delicious summer recipe that will make your day a little bit brighter ☀️

This is a quick and easy dish that comes together with just a few simple ingredients but it is bursting with flavour.

Sweet, salty, tangy and delicious – here’s the recipe for my new fave summer dish.

Ingredients:

3 peaches

2 cobs of corn (or 1.5 cups frozen or tinned corn)

1 avocado

2 cups cooked Good Earth red rice

2 large handfuls fresh baby spinach

120g mozzarella bufola

Dressing ingredients:

1 spring onion

2 tablespoons olive oil

Juice from 1/2 a small lemon

1-2 tablespoons Mayo

Method:

Start by cooking your red rice according to package instructions – try to use red rice as opposed to any other variety. It’s far more nutritious, tastes nutty and delicious and makes the best addition to this recipe.

Meanwhile, grill your corn if you’re using fresh corn on the cob. It takes just 15 minutes in a pan or on the bbq.

Once cooked, cut corn off the cob and add to a bowl. Slice peaches and cut avocado into cubes. Add your cooked rice, baby spinach, chopped veg and peaches together with mozzarella to a large bowl.

In a small bowl, mix Mayo, olive oil, lemon juice, salt and pepper together with a finely sliced spring onion. Mix well and add to salad bowl with your other ingredients.

Mix well and enjoy 😉
