Hello there lovely people, I hope you are all doing well. I’m very happy to be back in the swing of things sharing delicious healthy recipes with you all.
Nothing says summer like a nice zesty pasta salad – so here’s a super easy recipe that will keep your tummies full and your taste buds happy.

Ingredients:
500g Good Earth wholemeal pasta
1 small – medium butternut squash
250g brussel sprouts
200g mini fresh mozzarella balls
50g pine nuts
Fresh basil
Extra virgin olive oil
Juice from 1/2 a lemon
Salt and pepper



Method:
Start by boiling pasta according to package instructions.
While that’s boiling, prep your veggies. Preheat oven to 200 degrees Celsius. Peel butternut squash and chop into small bite sized chunks. Drizzle with olive oil, add salt and pepper. Add to a baking tray and roast for approx 40 minutes.
Chop brussels sprouts in half and add to another baking tray with olive oil and salt and pepper. Roast for approx 30 mins or until golden.
Drain pasta and add roasted veg, chopped fresh basil and set aside.
Toast pine nuts in a dry non stick frying pan for a few minutes until golden. Keep a close eye on them as they burn very quickly.
Meanwhile, slice your mozzarella balls in half and add to pasta and veggies together with toasted pine nuts.
Finally, add a drizzle of olive oil, juice from 1/2 a lemon and mix everything really well. Give it a taste and season with some salt and pepper if needed.
