Chocolate Pudding (vegan)

Hello there beautiful people, I hope you’re all doing well!

I’m back at in, finally back in the kitchen cooking up new recipes. We’ve made the decision to go fully vegan at home so I’m creating many new healthy vegan recipes to make sure we don’t get bored.

This switch has been a long time coming; I’ve been cooking vegan food for about six years so this isn’t new to me. However with so many events and having so much going on for such a long time, my time to cook and experiment with healthy plant based foods had become rather limited. So I’m very happy to be able to get into it again!

This chocolate pudding is AMAZING – creamy, thick, dreamy and absolutely delicious. It’s easy to make, contains just FOUR ingredients and takes literally minutes to put together.

It’s heart healthy, loaded with fibre, antioxidants and bursting with flavour. Here’s the recipe:

Ingredients

2 tablespoons chia seeds

2 tablespoons almond butter

1.5 cups Alpro ‘this is not milk’

2 tablespoons agave / maple syrup / liquid sweetener of choice

Method

Simply add all the above ingredients to a high powered blender, I used my NutriBullet for this, and blend until smooth. Transfer to ramekins or small pretty bowls and refrigerate for a minimum of two hours. These last in the fridge for easily four days so you can make them well ahead of time if you’re entertaining for example.

This is technically chia pudding however blending everything together give it the dreamy creaminess that chis pudding often lacks in my opinion – it really makes all the difference. Certainly worth pulling out your blender for!

NOTE: I’ve made this with different plant milks but this Alpro milk is definitely the best. It’s very similar to regular whole milk in both flavour and texture which gives this pudding needs and deserves so this is DEFINITELY the best option!
