White Bean and Broccoli Stew

Hello there beautiful people, I hope you’re all doing really well!

Today’s recipe is a really simple, hearty, warming dish that is loaded with plant power.

This is really easy to batch cook and very quick to make. It freezes really well so feel free to double the recipe to freeze the extras for a busy day! Here’s the recipe

Ingredients

1 onion

2 cloves garlic

1 fresh chilli or 2 teaspoons chilli flakes (optional)

2 tablespoons tomato paste (kunserva)

1 teaspoon hot curry powder (or mild if you prefer)

1 teaspoon turmeric powder

2 small potatoes (I used white potatoes but you can opt for sweet potatoes if you prefer)

2 cups white beans (cooked)

2 cups water

1 veg stock cube

1 head of broccoli

*if you want to add some extra protein here, feel free to add in some lentils, some form of animal protein or even top it with some cheese!

Method

Start by adding some olive oil to a large pot and add your onion. Sweat it out for a minute or two then add your garlic, spices, tomato paste and chilli (if using). Cook for a few minutes until very fragrant. Don’t rush this step, it builds so much flavor and makes a big difference in the final result.

Now start adding potato, beans, water and stock cube or stock and simmer for around 30 minutes until potatoes are tender and then add broccoli and simmer for an additional 5-10 minutes.

Portion out, freeze your extras and enjoy 😊
