Hey there beautiful people, I hope you’re all doing well.
I recently ran some polls on my Instagram and Facebook stories to see what you guys wanted to see from me.
The most requested and voted for was fill veggie meals (as opposed to sides, treats, snacks and so on).
One of my fave quick and easy meals is this butternut squash “sauce” that I like adding to rice – it’s not really a risotto, that’s too involved for a week night dinner for me.

Basically this simply involves roasting butternut squash then chucking it into a blender with a few other ingredients et voila – you’re done and it’s absolutely delicious!
If I have extra we like to use it as a spread on sandwiches or as a dip; so you’ve got dinner and snacks sorted with just one easy recipe
INGREDIENTS:
1 medium butternut squash
Olive oil for roasting
1/4 cup nutritional yeast
3 tablespoons tahini
Juice from 1 lemon
2 tablespoons apple cider vinegar
1 cup unsweetened milk (I like using oat milk, regular milk works too if you’re not after a fully vegan recipe)
2-3 portions cooked brown rice (or cooked grain of choice; this also works well with quinoa and pasta)
Toppings:
Green onions
Pumpkin seeds

METHOD:
Start by peeling, chopping and roasting the squash. I roast it for approx 50 minutes at 200 degrees Celsius. This way it’s lovely, caramelized and immensely flavorful.
Allow to cool.
Add almost all the roasted squash to a high powered blender (my Nutribullet works wonders for this sort of thing – done in about 30 seconds). Set about 2 handfuls of roasted squash aside.
Add all the other ingredients (except for reserved squash and rice) to the blender and blitz until a beautiful, creamy, silky sauce remains.
Mix everything together, warm well and top with pumpkin seeds and spring onions. Enjoy 😉
