Red lentil patties

Hey hey beautiful people, how’s autumn treating you so far? Anyone else really enjoying the cooler weather? I feel like I can finally breathe again.

With cooler weather and changing seasons, come new recipes. This one is a winner – I’ve been trying out a lot of veggie combos to make delicious patties lately and these are definitely my fave; some of the best I’ve ever made!


200g red lentils (weighed uncooked)

140g sweet corn ( I used tinned)

3-4 spring onions or 1 small red onion

1 teaspoon cumin

1/2 tsp turmeric

3 tablespoons ground flaxseeds

3 tablespoons wholemeal flour



Start by cooking red lentils until tender. Allow to cool completely then add all the ingredients to a large bowl and mix well. Make sure that the spring onions are finely chopped and the corn ringed and drained.

Once you have your mixture ready, allow it to set for 30 mins (or more). This give the flaxseeds time to absorb the moisture resulting in crispy patties.

Now simply add a tablespoon of coconut oil to a hot pan, shape mixture into small flour patties and fry for a couple of minutes on each side.

Add to a nice big salad or some grilled veg and enjoy a nice veggie meal 😉
