Healthy Homemade Protein Bars

Hey beautiful people, I hope you’re all doing well!

I don’t know about you, but at our house, snacks are very in demand; whether it’s a quick post-workout bite or something yummy to nibble on while on the sofa, we just love snacking.

I make it a point to try and avoid high salt, high sugar and highly processed foods however it’s not always easy to do so. While there are many better options on the market nowadays, I do try to make most of the foods we consume myself. Mainly because it is the healthier option but also because I can better control portions and it’s so so much cheaper too!

Protein powders are available everywhere nowadays, from health shops to supermarkets and even in pharmacies. There are some good options BUT there are also a lot of powders that aren’t great. I like opting for the simplest ones; namely one ingredient protein powders that are completely and totally free from additives and preservatives that are bodies don’t need.

I like using really simple natural ingredients when I can. I have had many issues with digestion and using good ingredients really helps me avoid inflammation and discomfort. Plus being a breastfeeding mama has made me so much more careful about what I consume because I know my daughter is getting the nutrients from my diet.

These bars take literally just a couple of minutes and very little effort to make. All you need is a handful of ingredients, a food processor or high powered blender and an silicone or parchment lined over dish. No cooking is involved here!

Ingredients:

2 tablespoons Good Earth coconut oil

1.5 cups Good Earth dried apricots

1 cup Good Earth pecan nuts

1/2 cup Good Earth hemp protein

1 tablespoon honey (optional)

Simple add all the above ingredients to a food processor and blend until all the ingredients are finely chopped and incorporated. Now add to your prepared dish and press down. Place this in the fridge for at least an hour to harden then remove from the dish, slice and enjoy!

These contain a healthy source of protein from the protein powder and nuts and good fats from the nuts and coconut oil.
