Happy Saturday beautiful people – I’m really happy to be back with a new blog post after missing a post for the first time this year last week. I needed a little breather; late pregnancy + insomnia + running a business + moving house is NOT easy and even though I’m immensely grateful for this new chapter, at times I find myself feeling like I’m drowning. Keeping up with life can be challenging at times, that’s why having some easy speedy healthy recipes can make a world of difference.
Quick meals you can put together with your eyes closes are real time savers. I know that spending hours in the kitchen after a long day at work or with the kids or running errands or anything else doesn’t sound appealing to many. When it’s hot outside, a nice salad that I can put together in minutes really hits the spot!
Now if you’ve been here for a while, you know that my salads aren’t made up of a pile of limp lettuce on a plate – no way would I EVER find that satisfying. I LOVE experimenting with different ingredients, layering flavours and trying new things! So, here’s a run down of some of my FAVE, super HEALTHY salad dressings that will turn any salad from drab to fab in minutes 😉
- Zesty Vegan Yogurt Dressing
This dressing is a relatively new discovery and a very happy one at that – all you need for this dressing is:
400g Alpro Greek style Yoghurt
1 teaspoon Good Earth organic honey
3 tablespoons Good Earth Apple Cider Vinegar
1 lemon – juice and rind
Simply add all the above ingredients to a bowl and mix well until combined. Add salt and pepper to taste and add mix with your salad. It adds a really lovely fresh, zesty flavor that you’re sure to love – this is a great option for a vegan coleslaw in place of mayo!
2. Sesame Sensation
This is definitely the dressing I make most often; it works with cold salads, roasted vegetables, rice salads – you name it. All you need is:
Juice of 1/2 a lemon
2 tablespoons tahini
1-2 cloves roasted garlic OR 1 teaspoon garlic powder
1-2 tablespoons sesame oil *depending on preferred consistency
Simply whisk all the ingredients together in a small bowl or jar, add salt and pepper to taste and enjoy. The best part is that you can make this well in advance and store in the fridge for up to 10 days! You might need to thin it out with some warm eater, some more lemon juice or sesame oil before using as it will harden in the fridge over time but that’s it!
3. Tangy Yoghurt Dressing
Yogurt dressings are very much up my alley at the moment; the tangy flavor really works well and the flavor combos are limitless.
This one is just:
200g Greek yoghurt
2 tablespoons olive oil
1 tablespoon Good Earth apple cider vinegar
Juice of 1/2 a lemon
1 clove garlic
Fresh herbs. I used parsley here; feel free to sub for fresh herbs of choice.
Grate / mince / chop garlic very finely and add to bowl with lemon juice, yoghurt, vinegar and oil. Mix well and add to salad of choice. This pairs really well with a salad of mixed fresh leaves and roasted veg! Make this ahead of time and enjoy within a week.
4. Honey Mustard Dressing
A classic is a classic for good reason; I’m not entirely sure the way I make this is the classic way to make a honey mustard dressing but it’s very easy and really tasty!
What you’ll need:
1/4 cup olive oil
1/4 cup Good Earth apple cider vinegar
1 tablespoon mustard of choice
2 teaspoons Good Earth organic honey
Salt and pepper to taste.
Whisk all the above ingredients in a bowl to combine. This recipe makes a lot of dressing but this lasts for ages in the fridge so you use it gradually. This even makes a really nice marinade for chicken or roasted veg!
5. Bonus Tahini Drizzle
Here’s a bonus salad dressing tip – if ever you find yourself short on time and / or don’t want to mess about in the kitchen for longer than 3 seconds, just drizzle some tahini over your salad, maybe also add some sesame seeds for a bit of crunch, and presto bango – you’ve got yourself a delish dish! You’ve also successfully added an additional plant food to your meal together with healthy fats and protein – win win!

6. Bonus Bonus Dressing Options
If you’ve made a nice dip during your weekly meal prep, or you purchased your fave hummus, tzatziki or bigilla for example, just add a dollop over your salad. They will add a nice flavor profile and moistness that many salads are missing!
