Happy Saturday – I hope you’ve all had a great week!
I feel there’s no better time to share simple yet scrumptious soups than in now. February always feels so long and boring; at least to me. It’s cold, there’s nothing going on (this year more than ever), spring / summer seem far off and the Christmas + Jan detox excitement has gone out of the window by now. So, finding really easy, cheap, efficient and delicious ways to eat well is so important.
Here’s a run down of my absolute favorite winter warmers that you have to try out for yourselves.
The first one is my new lentil soups – including all required ingredients together with images and method below. Below you’ll find another six delish dishes that are linked – all you have to do is click on the link above the photos (the underlined title) and it will take you to the recipe.
NEW Brown Lentil Soup
This is my new go-to winter soup. Just a few simple ingredients, but cooked right, it packs a lot of flavor. The trick is cooking the veggies down for a really long time before adding the water and therefore allowing the flavors to develop.

Here’s what you’ll need to make it:
4 carrots
2 onions
2 zucchini
4 cloves garlic
1 teaspoon turmeric, 1 teaspoon sweet paprika, 1/2 teaspoon cumin
200g brown lentils
600-700ml water
1 kallo low salt veg cube
Alpro coconut cuisine (optional)

Method:
Start by heating up a tablespoon or so of oil, add onions and carrots (both roughly chopped) and cook together for a minimum of 5 minutes.
Now, add garlic, spices and zucchini and mix well. Cook over medium heat for an additional 20 minutes. I know it sounds like a really long time but trust me, this makes ALL the difference.
Finally, add lentils, water and stock cube and cook for an additional 40 to 60 minutes.
Again, a long time to cook soup – but the cooking down and rendering of flavor turns these really basic ingredients into a really flavorful delicious meal.
Serve with a dash of coconut cream on top for the perfect winter meal 👌🏼
