I’m often asked for quick, easy, healthy lunch recipes, so now that everyone seems to be going back to their ‘normal’ work / school routine, I thought I would share some easy lunches that you can quickly prep and take to work or school.
I do share many recipes both here and on my FB and IG profiles – both @holisticnutritionninja – but having them all in one place in this post may make it easier to refer to so I’m going to be listing many different recipes that make great to-go lunches right here.

Another easy recipe that makes a great to-go lunch is this mushroom risotto linked below:
Make it for dinner and enjoy to for lunch the next day. It’s uncomplicated, makes the best left-over lunch and unlike many risottos, it’s still lovely the following day 🙂
The next recipe is a lentil coconut curry – this is one of my favorites. Creamy, packed with tons of flavor and tastes even better a day or two after making it. Click on the link below for the recipe:
If you’d like the change the ingredients for this one, feel free to swap out what you don’t have or don’t like – it works well with a multitude of different veggies 🌽
Here’s another lunch idea: Falafel. I’ve launched my own (which you can learn more about by clicking on the link below). But of course, you can also purchase elsewhere or make your own.
Falafel salads or wraps make an excellent (plant) protein packed lunch!
Another delish dish that is very high in protein and also very versatile is these savory chickpea pancakes – really easy to make, very flavourful and they make a really nice change to your typical store bought wraps (which I use all the time too) – these do make a nice flavorful change though!

Finally, if you have the option to warm up your lunch at work / school or when working from home, soups make an excellent lunch. You can make a large batch to use throughout the week or freeze in portions and thaw the night before using.
