I’ve been playing around with these chickpea pancakes because I’m really tired of eating the same things.
I had made these a few times before and totally forgot about them until I found a pack of gram (chickpea) flour in my pantry and remembered I used to make these a while back.

These are super simple to make, really nutritious and involve very little effort and ingredients!

Here’s how to make them
Ingredients:
200g chickpea/ gram flour
350ml milk of choice (I used skimmed long life milk this time because I’m out of everything else – but I’ve made these using oat milk and unsweetened almond milk and they work just as well)
3 tablespoons nutritional yeast
Aromatics of choice – I used 1 tsp sweet paprika, 2 tsp turmeric, 2 tsp garlic powder and salt and pepper. However feel free to use any herbs and spices you have on hand.
Method:
Whisk all your dry ingredients using a fork or whisk and mix well until there are no lumps. Gradually add the milk and whisk until a thick batter forms.


Now, heat a non stick pan and add about a ladle full of your batter. Allow it to cook for a couple of minutes until the pancake starts to bubble on top. Cover pan to make sure it cooks through


Gently flip and cook for an additional minute or two on the other side. Then remove from pan and repeat with the remainder of your batter.

Once all your pancakes are cooked, load then up with your fave ingredients.
I use hummus or tzatziki on top and either some stir fry or fresh veggies. I also love topping these with avocado 🥑 (of course).
