Hello there beautiful people, I hope you’re all well. With everything going on right now, I’m sure we’re all somewhat worried, however, I find that keeping myselg busy really helps take my mind off things.
As I’m sure many are doing right now, I’m spending a lot of time cooking (and eating) – this time I made a healthy treat that we LOVED!

I wanted to make something that felt Easter appropriate – seeing as Figolli are our traditional Easter sweets locally, I wanted to make something reminiscent of that sweet almond flavour we all know and love (at least I do), without so much added sugar and too much hassle. I did attempt making healthy Figolli, however I didn’t love the result. So I decided to make something far simpler, healthier and tastier instead!
Here’s the recipe for my new fave treat – Healthy EASTER Almond Cookies / biscuits
Ingredients:
1 cup spelt flour
1 cup ground almonds
4 tablespoons melted coconut oil
5 tablespoons honey
1-2 tablespoons lukewarm water

Method:
Preheat your oven to 175 degrees Celsius.
Add all your ingredients, except water, to a bowl and mix well using your hands. This is a very dry dough so using your hands will help here. Your dough should look shaggy and dry but hold together when formed into a ball. If your dough doesn’t hold shape when formed into a ball, start by adding 1 tablespoon of warm water. Mix thoroughly and try again. If it still doesn’t hold it’s shape when formed into a ball, add the second tablespoon of water and mix again.

Now, shape into 10 – 12 small balls and flatten onto a parchment lined baking sheet. Don’t worry if your cookies look shaggy and dry at the edges – that’s how they’re supposed to look!
Bake for 10 – 14 minutes until edges are golden brown. They will still be soft at this point. Remove from oven and allow to cool.

They enjoy with a nice cup of tea – that’s it 🙂
