Good morning beautiful people – I hope you’re all doing well!
I made a new dip last week and it was so yummy, I thought I’d share it here for you all to be able to try. I often just share simple recipes over on my FB and IG pages (both @holisticnutritionninja) but I wanted to share this one here to be able to use as reference for the future.
I’m a big fan of hummus, however I like to change things up – I’m one of those people who HATE eating the same thing over and over so naturally, I tried many different varieties over the years. The one I’m about to share with you here is by far my fave!

Here’s how to make it…
Ingredients:
2 cans chickpeas or butter beans – drained and rinsed
5 medium Carrots
1 large Red bell pepper
1 head Garlic
4 tablespoons sesame oil
1 tablespoon Apple Cider Vinegar
juice of a small lemon
salt and pepper
Chives (optional)
Method:
Start by roasting your veggies. Chop off the top most part off the head of garlic place in a small piece of foil and add a bit of olive oil. Peel the carrots and wash the bell pepper then add some olive oil and a bit of salt. Place in the over at 200 degrees Celsius for about 40 minutes until they are completely cooked through and slightly charred.

Once cool, remove skin off bell pepper and add all the above ingredients to your food processor or blender and blend until smooth.
Then place your delicious dip in a pretty bowl, top with some chopped chives and serve with crackers or veggie sticks. Super YUM!
