Peanut Butter BOMBS

I hope you’re all feeling awesome today! I’m super excited to share this new treat recipe with you guys – they’re so super easy to make, packed with goodness and taste AMAZING!

I know that I say this often, but this REALLY REALLY REALLY is a favourite of mine! So so yummy, packed with protein, good fats, low in carbs, really quick and easy to make, you can dip them in chocolate or leave them plain, you only need a handful of ingredients a few minutes and one bowl to make them – what’s not to love?!

I made these for the first time last weekend, and if you’ve been here for a while, you know that I meal prep a lot of treats and grains and dips and stuff to use throughout the week. My weekdays tend to be long and really busy so making treats is a no-go for me. BUT I broke my own rule TWICE in a week because we ate them so quickly and wanted more immediately – that’s how good these are!

OK, let me just get to the recipe now before I hype these too much…

Ingredients:

1 cup peanut butter – crunchy is my personal fave here but smooth works fine too

1/2 cup coconut flour

1/4 cup honey (or any liquid sweetener of choice)

Dipping chocolate (I used both dark and milk chocolate)

Bee pollen (optional)

Method:

Mix honey, peanut butter and coconut flour in a large bowl – mix well until all ingredients are incorporated and no flour is visible. Then roll into balls and allow to set in the freezer for 1/2 an hour or in the fridge for an hour. THAT’S IT!

How easy is that?

Now you can move to the fun part – which is also optional because they are delicious as they are. In my opinion, dipping them in chocolate makes them even better however if you’re not a fan of chocolate, leave them as is and they’re lovely anyway.

I used both dark and milk chocolate because my fiance (typing that feels quite strange still) doesn’t like dark chocolate (which I LOVE) so I used both. Personally, I think the milk chocolate is a bit too sweet but both he and some guests we had over loved them so it’s a matter of chocolate preference more than anything else.

Simply melt some chocolate in the microwave or using the double boiler method -which is just heating up a small amount of water in a pan on the stove and placing a bowl on top with chocolate; just make sure the bottom of the top bowl is not touching the water in the pan underneath. Now, dip your peanut butter bombs in chocolate and top with bee pollen and place in the fridge or freezer to set completely.

The bee pollen is option but HIGHLY recommended, especially if you’re using honey in the mix for the bombs because it gives them a really complex and really delicious honey flavour without adding extra sweetness. Plus bee pollen is actually SUPER nutritious and a new staple in my diet personally because I find that including it into my meals (especially at breakfast) make a lovely addition and it helps with improved immunity = win win!
