MEAL PREP – Snacks Sweet Edition

I hope you’re all doing well and are having a great week so far.

I’ve been feeling quite lethargic and demotivated lately if I’m being totally honest; a bit low in both energy in mood. Probably because I’m overstretched and tired. I wan’t going to share this here because I want this to be a place where you can come and feel inspired and motivated and ready to take on the world not my own personal therapy BUT then I figured, what’s more relate able than a young adult feeling overwhelmed and exhausted nowadays?

So, here it is – I’m exhausted, I’m finding it difficult to get out of bed every morning, have a never ending to-do list that I don’t even want to look at right now and working out feels like a chore. I really hate feeling this way BUT I know it’s temporary and funnily enough, one thing that helps me snap out of it is MEAL PREP.

Taking the time to take care of yourself, purchasing good ingredients, spending some time in the kitchen and having something tasty to look forward to and one less thing to worry about really helps me get back to a positive mind-frame. When I’m not organised, I start feeling like I’m all over the place; prepping some tasty treats to take with me on the go or to have at home when I get in is really helpful for me. This way I avoid munching on things that aren’t great and I also feel like I’m adult-ing well (I know that’s not actually a word but it should be!)

Here are my top picks for SWEET SNACKS you can easily prep:

  1. FOUR INGREDIENT ENERGY BITES

This is one of the first treat recipes I ever made when I purchased my very first food chopper some five or six years ago and they’re still a favorite – I call them my OG treats! BONUS: make a HUGE batch of theses and keep them in the fridge for up to three months and in the freezer for up to a YEAR. (If you’re not a fan of chocolate, simply remove the cacao from the recipe – they’re still delicious)

2. APRICOT BITES

These energy bites are delicious and nut free – so if you’re looking for a recipe that doesn’t include nuts, if you’re allergic or you just don’t fancy nuts, this one is for you πŸ™‚

3. NO BAKE OAT BARS

These, on the other hand, are nutty, sweet, packed with flavour and goodness, take minutes to make and contain no added sugars or sweeteners of any kind. If you’re looking for something a bit more Keto friendly, look no further!

4. PB CHOC ENERGY BITES

Peanut butter and chocolate are a match made in tastebud heaven – to make these, all you need is a big bowl and a handful of ingredients. No equipment required! So, if you’re not interested in investing in a food processor (or you just don’t feel like cleaning it after), this one’s for you.

5. CHIA JAM

I love this chia jam – it’s totally customize-able, uses no equipment, there are two super easy methods to making it and you can use fresh or frozen fruit – so you can enjoy it all year round. I love topping my oats with this jam, or adding it to some Greek yogurt and fruit.

6. RAW BACI

This one is a definite crowd pleaser – perhaps more of a dessert than a snack but when you’re using such great ingredients, you don’t need to choose πŸ˜‰
