Raw BACI

Good morning lovely people, I hope you’re all doing really well ♥️

I was experimenting in my kitchen last week trying to make some new treats and made a delicious energy bite that tasted similar to a dark chocolate BACI. So, I quickly added a hazelnut on top and dipped them in chocolate and voila – raw healthy BACI 🥳

This is what I call a happy accident – some of my favorite things in the kitchen (and life) happen this way!

Here’s how to make them…

Ingredients:

1 cup oats

10 medjool dates

1/3 cup raw cacao

1 heaped tablespoon almond butter

1 tablespoon coconut oil

60ml water

Toppings:

10-12 whole roasted hazelnuts

100g dark chocolate

1 teaspoon coconut oil

Method:

Start by adding all the above ingredients to your food processor (except topping ingredients). Once all the ingredients are well incorporated and form a sticky balls in the food processor, start making individual balls using a spoon or ice cream scoop to achieve the same size balls. Once all the mix is formed into small balls, (I made 12 with this mixture) add a hazelnut on top of each one and press gently. Transfer balls to fridge to set for 30 minutes minimum.

Once the 30 minutes are up and the baci balls are set, melt your dark chocolate and add 1 teaspoon coconut oil – this loosens the chocolate and makes it easier to coat baci balls. Now dip them one by one in the melted chocolate, transfer to a parchment lined tray / plate and return to the fridge for an additional 30 minutes until fully set.

Then, snap a photo, share it, tag me and tell me how you like them 🙂
