Good morning lovely people, I hope you’re all doing well!
I’m feeling really festive this morning – I’ve been baking and cooking up a storm in my kitchen working on some DIY Christmas Gifts.
I often get calls and messages from family and friends after posting a picture on my Facebook and Instagram pages (both @holisticnutritionninja) asking for a serving of the goodies I’ve made. So, this year, I thought I’d prepare TONS of goodies as little DIY Christmas gifts for my loved ones as small gifts or little additions to their Christmas gift!

I’m going to be sharing what I’m making together with all the relevant recipes in a new blog post coming early next week – so stay tuned!
In the meantime however, I thought I’d share a simple energy bite recipe that I intend on using in my DIY Christmas gifts. I made a batch of these delicious apricot bites this morning and I am desperately trying not to eat all of them myself! Here’s how to make them:

1 cup rolled oats
2 cups dried apricots
2 tablespoons maple syrup (or any liquid sweetener)
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
Method:
Simply place all your ingredients in a food processor and blend until your mixture forms a ball. Then use an ice cream scoop to portion out your mixture into equal amounts and roll into balls. Then place in your fridge for about an hour to allow to set properly and then devour to your heart’s content 🙂
