Simple Salmon Patties

Hello there beautiful people ♥️

I hope you’re all doing really well! I made yummy salmon patties for dinner last night and thought I’d share the recipe with you all today.

Even though I’m not the biggest fan of fish, I try to incorporate it into my diet at least once or twice a week. Cooking a whole fish is not really my thing, so finding a different way to enjoy it is really important for me.

Here’s what you need to make them:

1 large fresh salmon steak (approx 300g) chopped into about 1 cm cubes

2 finely sliced spring onions

2 eggs

4 tablespoons spelt flour

1/2 a red bell pepper – chopped into small cubes

1/2 a yellow bell pepper – chopped into small cubes

1/2 a large zucchini – also chopped into small cues

Method:

Add all the above ingredients into a large bowl and mix really well. Make sure all the egg and flour are well incorporated.

In a large non stick pan, heat up 1 tablespoon of oil. Once the pan is hot, add a heaped tablespoon worth of the salmon and veggie mix. Do this until your pan is full of small salmon patties. Cook covered for about five minutes on medium heat. Then flip and cook for a further 3 to 4 minutes on the other side. Do this with each patty until all the mix is formed into patties and cooked completely. 

I served mine with a side of boiled sweet potato and a avocado, tomato and feta cheese salad.
