No-bake oat bars 😋

Good morning beautiful people,

I hope you’re all doing well and had a great weekend. I had my nutrition workshop last Saturday – the start of season 2 🎉 – and I genuinely loved every minute!

One of the treats I made for the event were these no-bake oat bars that I had prepared beforehand (because they take some time to set in the fridge) and they are so so good!

These went over really well at the event 😊 everyone seemed to love them! So as promised, I’m going to be sharing the recipe here.

These are really easy to make, contain no added / free sugars and delicious!

Ingredients:

1 cup / 230g packed pitted Medjool dates.

1 1/2 cups / 180g rolled oats

1 cup / 160g nuts of choose ( I used hazelnuts and walnuts)

1 – 2 tablespoons coconut oil

Pinch of sea salt

Method:

Optional: add oats and nuts to a baking dish and bake in the over for a maximum of 10 minutes. I like doing this to get rid of the flour taste that raw oats sometimes have.

Pulse dates in a food chopper / blender / food processor until a paste forms. Then add to a bowl with the rest of the ingredients and mix everything really well. Use your fingers if you need to as the mixture is going to seem very dry.

NB: If you like you sweets to be very sweet, feel free to add 1-2 tablespoons of a liquid sweetener of choice.

Then add this combined mix to a parchment lined baking tray and press down firmly all around. Refrigerate for at least 4 hours or overnight – then slice up and enjoy 😊
