I hope you’re all doing well! If you like fresh pesto, be sure to try this one – my pesto is the besto (friends reference 😂)
I am not vegan, however, adding in more veg and reducing animal foods is of utmost importance both for our health and for the planet. Swapping the cheese for nutritional yeast will reduce calories and saturated fat intake!
With this one, you won’t sacrifice flavor for health – it really is just as good as regular pesto, which I don’t even make or purchase anymore because I genuinely prefer this version.

Ingredients:
2 cups packed fresh basil
2 cloves garlic
100g pine nuts
1/2 cup olive oil
1/4 cup nutritional yeast
Method:
Dry roast your pine nuts in a pan on low heat for a couple of minutes until fragrant. Keep an eye on them – they burn really quickly so once the pine nuts are golden and fragrant, get them off the heat immediately.
Then transfer all the ingredients, including the nuts into a food processor or high powered blender. (You could even use a mortar and pestle if you have one.) Just pulse to combine for a few seconds and you’re done! ✅

I love using this over toast, with pasta, I also like mixing it with some yoghurt and then use it as a salad dressing – whatever you fancy – this adds a ton of flavor and freshness and is so worth making at home. It takes a couple of minutes and uses just 5 ingredients. Make sure you tag me in your posts if you try this, I’d love to hear what you think 🤔
