I hope you’re all doing really well! Today I’m going to share one of the best things I have EVER made – I’m not kidding, I could eat this all day every day and enjoy every bite.
For those of you who are new here – first of all, hey 🙂 thanks for joining! – secondly, you may not know this about me, but I am and self-proclaimed chocaholic. I LOVE chocolate, any and all times of day, for any occasion or any reason, I just love the stuff.
I’ve always absolutely loved chocolate hazelnut spreads BUT most traditional brands contain so many nasty ingredients and so much sugar that I try to avoid them completely. To be totally honest though, there are a couple of new brands that I’ve found recently with much much better ingredients, I’ve shared them many times on my instagram and facebook stories and will share a post using them too just to give you guys a healthier option if this seems like too much trouble to make. However, this recipe is REALLY simple, really easy to make and so delicious that I bet you won’t be purchasing any ready made chocolate spreads once you try this one.
The ingredients I used here are really wholesome and simple and really easy to find. Not to mention they’re beneficial for our health – win win!
Equipment required: Food Processor
2 cups (300g) hazelnuts
2 tablespoons coconut oil
3 tablespoons maple syrup (or any liquid sweetener of choice)
1/2 cup (100ml) vanilla almond milk OR milk of choice and 1 teaspoons vanilla essence
2 – 3 tablespoons raw cacao
pinch of salt
If you are using raw hazelnuts with skin on, start by baking the nuts on a sheet pan for 8 to 10 minutes in a 190 degree oven. Once baked, remove as many of the skins as possible; I often do this by placing the cooked warm nuts in a clean dish cloth and give them a good roll and shake.
You could opt for using cooked hazelnuts with the skins already removed (image above) and avoid the above step entirely. However, I have found that when making nut butters, using warm nuts makes it much easier for the food processor to break down the tough nuts so I often warm them up slightly in the oven or microwave to make them easier to process.
Transfer warm nuts into food processor and blend on high until a hazelnut butter is formed. If this is taking a very long time in your machine, I find that adding the 2 tablespoons coconut oil at this point rather than at the end helps move things along quite quickly,
Once your hazelnut butter has formed, simply add the rest of the ingredients listed above, pulse for an additional minute or two to make sure everything is well incorporated and then transfer to a container that can easily seal – like a mason jar or a tupperware type of container and enjoy.
Note: In the ingredient list I wrote 2-3 tablespoons raw cacao – I normally use 3 tablespoons because I like it very rich and chocolatey but you could start with 2, taste and then decide if you’d like a more intense chocolate flavor.
Slather this all over everything and live happily ever after!
This is so delicious that you’ll never believe that the ingredients and so good for you – loaded with protein and healthy fats from the nuts, antioxidants from the raw cacao and truly wholesome – it tastes so naughty but it’s oh so nice 🥰
