Poached eggs in tomatoes; the ultimate weekend brunch dish πŸ…

Hello there lovely people β™₯️

If you’ve been following me for a while, I’m sure you’ve realized that I love eggs 🍳 From fried to scrambled to poached and anything in between – eggs have to be my favorite food / ingredient!

If you’re new here…. hi, my name is Sarah and I’m eggstremely fond of eggs πŸ₯šπŸ˜‚ ok I’ll stop now!

This dish uses fresh simple ingredients you probably already have at home, takes 15 minutes to make and tastes DIVINE! I’ve made this for dinner many times before but even more so, I love making this dish for weekend brunch!

Here’s how to make it!

Ingredients:

5 large tomatoes πŸ…

4 cloves garlic

Chili flakes

Fresh basil 🌿

Salt & pepper

3 tablespoons olive oil

4 eggs

Method:

Add olive oil to a large pan; make sure that you pan is deep enough for this one – a couple of inches deep will do. No need to use a pot. Also, make sure you have a lid to cover the pan you’re using.

Smash garlic with the back of a large knife until they split open, remove the skins and add to the pan with the olive oil. At this point, add chili flakes – I used about 2 teaspoons; this depends on your personal preference – add salt and pepper and allow the garlic to cook over medium heat.

While the garlic is cooking, chop your tomatoes into bite sized chunks. You could use cherry tomatoes instead, in that case, add them to your pan whole. Add your tomatoes to the pan when the garlic starts to brown slightly.

Allow the tomatoes to cook in the garlic, chili and olive oil mix for around 5-10 mins. Then, make space for the eggs in the pan by moving the tomatoes around to create a sort of hole. Add the eggs in there raw one by one and season the eggs with salt and pepper.

Now cover and cook for an additional few minutes until the egg whites have solidified and the yolks are still soft and runny.

Remove from heat and garnish with some fresh basil!

Serve warm over toasted bread and a nice cup of coffee and enjoy…
