How’s everyone doing today?
Last Saturday was my finally workshop for the next few months; during which I shared a new recipe for these delicious energy bars / balls which I came up with the day before while messing about in my kitchen.
Part of the talk had to do with inflammation and which foods increase inflammation and which foods help to reduce it.
One of the best anti-inflammatory foods is flaxseed oil – which is of course present in flaxseeds (also known as linseeds) and you can also buy pure flaxseed oil.
Side note: The oil is considered anti-inflammatory because it contains a high concentration of ALA (alphalineolic acid).
Which is why I wanted to use flaxseeds and purse flaxseed oil in this new treat recipe – here’s how to make them.
Ingredients:
1 cup / 150g dates
1/2 cup / 80g cashews
1 tablespoon almond butter
2 tablespoons hulled flaxseeds
1/4 cup / 20g dried cranberries
1 tablespoon pure flaxseed oil / coconut oil
Method:
If you only have whole flaxseeds, place them in your food processor before adding anything else and blitz them for a few seconds to break them up. Then add all the above ingredients to the food processor and blitz until the mixture comes together to form a ball.
Then press into a lined baking tray and pop it in the fridge for around 30 minutes. Slice into bars and reserve in the fridge.
