Good morning beautiful people, I hope you’re all doing well
Are you in need of a mid week pick-me-up? Try making these – all you need is four ingredients,, a food processor (or chopper) are five minutes and you’ll have snacks prepared for the rest of the week! (unless you eat them quicker – which normally is the case in our household).
This is one of the recipes I shared in last Saturday’s workshop – they went over really really well; I made a lot of extras before the event and came home empty handed; always a good sign ๐
Ingredients:
400g dark pitted dates
150g almonds – chopped, flaked, blanched, raw – whatever you prefer
2 tablespoons raw cacao
2 tablespoons coconut oil
If you’re using whole almonds, blitz them in the food processor first – you want them to be small chunks but not flour, so just a few seconds in the food processor will do. If you’re using flaked or chopped almonds, you can skip this step.
For the dates, if the soft and squishy *that’s probably not the technical term but I’m sure you get what I mean* you don’t need to do much – just make sure they’re pitted. If the dates you’re using aren’t soft to the touch, then soak them in hot water for a minute of two before adding to your food processor.
Once the almonds are ground into chunks and the dates are squishy, add everything to your food processor and blend for a minute or two until the mixture forms a ball. Once this happens, stop, remove blade and form mixture into balls and reserve in the fridge. These last in the fridge for several months and in the freezer for up to a year – yes you read that right ๐ I have a small in-case-of-emergency batch stashed away in my freezer that’s been in there since last July and they’re still absolutely perfect!
