Hello again beautiful people ❤️ I hope everyone is doing well.
If you, like me, have had a very busy week and are looking at a very busy weekend, I’m sure you’ll enjoy (need) these little bites of heaven in between.
I first made these when I was DESPERATE for something yummy but had nothing ready at home and didn’t want to fuss with too much. I always have dates and almonds at home; to me those are staples that I like to use in a lot of different things or just to snack on. I also had some dark chocolate – because why wouldn’t I have dark chocolate?!? Haha
So, I combined these 3 ingredients in the simplest way and Voila! The best, fastest, easiest, 3 ingredient “recipe” to satisfy your sweet tooth!
Ingredient:
Pitted dates
Whole almonds (I use raw but it’s a matter of preference)
Chocolate (I use dark but you can use whatever you prefer)
Method:
Start by chopping up chocolate so that it will melt evenly and quickly and melt chocolate gently over a double boiler – just place a pot with a small amount of water and let simmer; add a bowl on top (the bowl shouldn’t touch the water – I learnt this recently 🙄😂) and let it melt slowly.

In the meantime, place a whole almond in the middle of each date, in place of the pit. Once the chocolate is melted, add a few dates to the chocolate at a time and stir them around. Retrieve from chocolate using a fork to remove excess chocolate (like that even exists – excess chocolate = happiness).
Place of a dish / tray / plate lined with parchment paper and allow to set in the fridge for just a few minutes. That’s it 🙂 then eat away!
Dates are amazing because they are incredibly sweet and also very very high in fiber content. That meant that the net carb content is low which is awesome news if you want to go lower card BUT still have a sweet tooth. What this also means is that even though they’re super sweet, the effect on your blood sugar levels after consuming dates is not at all severe and therefore helps sustain balanced blood sugar levels. More importantly – they’re delicious and make an awesome snack, a delicious caramel and great energy bars – I’ll be sharing all of these recipes soon 🙂
