Avocado has to be my favorite fruit (actually, it’s a single seeded berry – I looked it up LOL). Whatever it is, I LOVE avocados and always have a couple on hand at home.
Whether it’s smashed on toast with a runny egg on top or sliced over chili or just chopped in a salad or even magically turned into a chocolate mouse with the addition of just a few ingredients, avocados are the rock stars of a heavily plant based diet – in my humble opinion of course 😊

My fave go-to two minute recipe is for my guacamole – or my version of…

Ingredients:
2 avocados
2 spring onions
1 tablespoon olive oil
juice of 1/2 a lemon
a handful of cherry tomatoes
salt and pepper
chili flakes (optional)
Method:
Cut avocado in half and remove seed. Remove flesh from skin using a spoon – I like to lightly (and carefully) cut vertically and horizontally with skin still on without piercing skin and then removing flesh using a spoon. This way, when you remove the skin, the flesh is already cut into small cubes. Mash avocados using a potato masher or fork until a smooth (ish) consistency is achieved. Finely chop spring onions and chop cherry tomatoes into quarters. Add them to mashed avocados together with olive oil, lemon juice, chili flakes (if using) and a generous sprinkling of salt and pepper.
Then just dip and enjoy – so good!!
