No Bake Oat Energy Balls

I just whipped up a batch of oat energy balls and ate them all 😂 so much for portion control! Well at least they’re full of healthy ingredients…. trouble is they’re way too easy to make so I’m currently trying my best not to get up and make another batch. Instead I’m posting the recipe here so you can try them out 😊

These are great for a quick breakfast on the go, or with some tea while blogging and studying – which is how I devoured them today!

Ingredients:

1 cup rolled oats

1/2 cup peanut butter

1/4 cup maple syrup or honey

1/4 cup cacao nibs

1/4 cup sesame seeds (or any other chopped nuts or seeds)

1 teaspoon vanilla extract

2 teaspoons raw cacao powder

Pinch of salt

Method:

Note: I always use organic peanut butter, other varieties contain too many ingredients I’m not happy to ingest. The oil tends to superare so to make sure my peanut butter is creamy and easy to mix in, I heat up the peanut butter and honey / maple syrup in a small sauce pan until combined.

Add all the above ingredients to the bowl and mix well using your hands. Portion out, roll into balls and enjoy (and try not to eat them all at once 😂)

Note: If the mixture is very dry, don’t worry! You can either try pressing into balls as is or add some water; add water 1 tablespoon at a time to avoid over using.
