Avocado Pesto Sauce

I love avocado and pesto; so I thought why not combine the two and make it into a sauce? So I did and I’m so pleased with the result πŸ’š

This sauce is so creamy and flavorful – I slather toasted bread with it, use it as a sauce with pasta or as a sauce with zucchini noodles and it’s really yummy! Super healthy too, loaded with good fats from the avocado, nuts and olive oil, it’s the perfect five minute sauce when you’re in a pinch for something yummy quick and healthy.

Ingredients:

1 cup fresh basil leaves

1 avocado

1/4 cup nutritional yeast

2 tablespoons olive oil

3 tablespoons water

1 teaspoon garlic powder or 1 clove garlic

A pinch of chili flakes

Salt and pepper to taste

Method:

Place all ingredients into food processor or blender and blend until a smooth paste is formed. You could also add some more water to make it a bit more runny and I normally do this when using it with pasta. I just add a couple of tablespoons of pasta water to combine with cooked pasta.

Normally, I set aside some of the sauce to have with toast the following morning or as a snack throughout the day. I have also used this over grilled chicken breast to add more flavor or just as a dip with veg sticks or crackers. Whichever way you choose to use it, it’s so yummy πŸ˜‹
